Recent grilling experiments

We have tried some new food on the grill lately: nachos and pizza. Not what you would usually find on the grill, but they were both great. The nachos are pretty simple. We have a nacho plate that we just pile up with chips and cheese. Get your charcoal grill (the only way to grill) set up with the coals on one side. Put the nachos on the opposite side (indirect) and grill your meat over the coals. Close the lid and let the grill act like an oven. Once your meat is cooked, cut it up and add to the nachos along with more cheese, jalapeƱos, and whatever else you want. Close the lid again and let them cook until the cheese is melted and the chips start browning a bit.

For the pizza, set up your grill the same way. Cook your dough directly on top of the coals. Make sure to put olive oil on the dough so it won't stick. Cook about 2 min and then flip. Once you flip add sauce, cheese, and whatever toppings you want. We used pepperoni, fresh garlic and green peppers. After 2 min move to the indirect side of the grill and close. Let the pizza cook until the cheese starts to brown a bit. This was probably one of the best pizzas I've ever had. Give it a try!

If Keith and I can ever get a night home together we will have to try the pizza, that sounds so good. Thanks for the how-to.
